The Best Rugela

Ingredients

Mixing

    Prepare the dough
  1. Beat butter and cream cheese until it feels light
  2. Add pastry flour and salt and mix until just combined
  3. Roll into a ball, divide into 4 equal pieces, roll each piece into a ball, then flatten each into a hockey puck shape. Wrap each piece in plastic wrap and put in fridge.
  4. Filling
  5. Combine prunes and apricot jam in food processor. Mix coursely or fine, as you prefer.
  6. Separately, stir together the walnuts, sugar, and cinnamon.

Assembly

  1. Take a dough puck out of fridge, roll out the dough into a 9-12 inch circle, depending on how thin you want the wrapper.
  2. After rolling out the dough, cover with plastic and return to fridge.
  3. Repeat with the 3 remaining dough pucks.
  4. Remove the first round from the fridge, and spread with 1/4 of the prune/apricot filling. Then sprinkle with 1/4 of the walnut, sugar and cinnamon mixture. Then press the walnut mixture onto the apricot/prune mixture.
  5. Cut the round like a pizza into 8 equal triangular slice.
  6. Starting at the wide end, roll each slice to the center until you can separate the rolled piece and pick it up.
  7. Place the roll on a parchment lined baking sheet, making that the tip of the roll is underneath. Place the rounds in the fridge.
  8. Repeat with the 3 remaining dough pucks.

Bake

  1. Preheat oven to 350º F
  2. Prepare the egg wash by beating the egg with 1 tsp water.
  3. Remove the rolls from the fridge and brush each with the egg wash.
  4. Place in middle of preheated oven and bake 20-30 minutes in until light or golden brown.
  5. Place on rack to cool.
