Weird Rugela

Bake Break all the rules.

Ingredients

  • Dough
  • Butter — 8 oz., chopped and room temp
  • Cream cheese — 8 oz., chopped and room temp
  • Salt — 1 tsp
  • Whole Wheat Pastry Flour — 2 cups (255 g)
  • Salt — 1/2 tsp
  • Filling
  • Walnuts, chopped — 1.5 cups
  • Apricot jam — 1 cup
  • Prunes — 1 cup
  • Ground cinnamon — 1 Tbsp
  • Brown or plain sugar — 4 Tbsp

Mixing

Prepare the Dough

  1. Beat butter and cream cheese until it feels light.
  2. Add pastry flour and salt and mix until just combined.
  3. Roll into a ball, divide into 4 equal pieces, roll each piece into a ball, then flatten each into a hockey puck shape. Wrap each piece in plastic wrap and put in the fridge.

Prepare the Filling

  1. Combine prunes and apricot jam in a food processor. Mix coarsely or fine, as you prefer.
  2. Separately, stir together the walnuts, sugar, and cinnamon.

Assembly

  1. Take a dough puck out of the fridge and roll it into a 9–12 inch circle, depending on how thin you want the wrapper.
  2. After rolling out the dough, cover with plastic and return it to the fridge.
  3. Repeat with the 3 remaining dough pucks.
  4. Remove the first round from the fridge and spread with 1/4 of the prune/apricot filling. Sprinkle with 1/4 of the walnut, sugar, and cinnamon mixture, then press the walnut mixture onto the apricot/prune mixture.
  5. Cut the round like a pizza into 8 equal triangular slices.
  6. Starting at the wide end, roll each slice toward the center until you can separate the rolled piece and pick it up.
  7. Place the roll on a parchment-lined baking sheet, making sure the tip is underneath. Put the rounds in the fridge.
  8. Repeat with the 3 remaining dough pucks.

Bake

  1. Preheat oven to 350°F.
  2. Prepare the egg wash by beating the egg with 1 tsp water.
  3. Remove the rolls from the fridge and brush each with the egg wash.
  4. Place in the middle of the preheated oven and bake 20–30 minutes, until light or golden brown.
  5. Place on a rack to cool.
